This is the three-way version of a comparison we have already run twice - stones vs ice and granite vs stainless steel. Reusable gel cubes are the option that sits between them, and they are marketed hard enough to deserve their own answer.
What a reusable ice cube actually is
A sealed plastic or silicone shell with a gel or liquid filling, usually mostly water with a thickener. You freeze it, drop it in, and the shell keeps the filling out of the drink. That is the entire design, and it explains both the advantage and the problem.
The advantage: the filling is largely water, so it stores substantially more cold per unit volume than a piece of rock does. Whisky Advocate's comparison, quoting Iskender Sahin of NYU Tandon, sets out why that matters - stone has a low heat capacity and gives up its cold quickly. A water-based filling does not have that particular weakness.
The problem: the shell stops the filling from melting into the drink, and melting is where most of ice's cooling comes from. A melting ice cube absorbs a large amount of energy while staying at its melting temperature - that phase change keeps pulling heat out of the whiskey for as long as the cube lasts. A sealed cube cannot do that. It warms up, and it is done.

The caveat that decides it for us
That is not a reason for alarm - the fillings sold for drinks use are food-safe - but it is a reason to prefer a chiller that cannot do it at all. Food-grade stainless steel is non-porous, cannot leak anything, will not chip a glass, and conducts heat better than stone. If the requirement is genuinely zero dilution, steel is the version to buy.
