Why big ice works

Two effects, and they pull in opposite directions in a useful way.

First, cooling is proportional to surface area. Whisky Advocate's comparison found that smaller ice chills fastest for exactly this reason - crushed ice has enormous surface area and made their whisky freezing cold. But the same surface area that chills fast also melts fast, so a glass of crushed ice becomes a glass of water quickly.

Second, melting ice draws on a phase change. Turning solid to liquid absorbs a large amount of energy while the ice stays at its melting temperature, which means a cube keeps cooling the drink for as long as it lasts rather than warming up gradually.

A large cube is the compromise between those two: less initial chill than crushed ice, far less water ten minutes in. That is why bars standardized on it, and it is a real, physical mechanism rather than a marketing position - which is more than can be said for the stones.

What about clear ice?

Cloudy ice is trapped air and dissolved minerals, pushed to the center as water freezes inward from all sides. A directional-freezing mold - usually insulated, often with a stainless core - freezes from one direction only, so the impurities are driven into a section you discard. The result is the transparent sphere you see in a good cocktail bar.

It makes no difference to the taste and a substantial difference to how the drink looks. Whether that is worth a slower process and more freezer space is entirely a matter of what the recipient enjoys.

Are large ice cubes better for whiskey?

Better than small ice for a slow drink, yes. A large cube has less surface area relative to its volume, so it melts more slowly and dilutes the whiskey less over the time it takes to drink it. Small ice chills faster initially and waters the drink down much sooner.

Are ice molds better than whiskey stones?

For chilling, considerably. Ice holds more cold than stone and keeps absorbing heat while it melts, a mechanism stones have no equivalent to. Stones win on exactly one thing: they add no water at all.

What size ice cube fits a whiskey glass?
